Ingredients

  • 4 to 6 ounces of dried whole-soba, udon, or rice noodles
  • 1⁄4 cup of sesame oil
  • 2 garlic cloves, minced
  • 1⁄4 teaspoon of red chili flakes
  • 4 cups of chopped asparagus
  • 1⁄4 cup of soy sauce
  • 1⁄4 cup of raw honey
  • 1⁄2 cup of chopped fresh cilantro
  • 1⁄2 cup of chopped fresh basil
  • 1⁄2 cup of chopped toasted peanuts
  • 1⁄2 cup of toasted sesame seeds

Method

Step 1

Cook the noodles in a large pot of boiling water according to the package directions. Drain and set aside.

Step 2

Heat the sesame oil in a large skillet over medium heat. Sauté the minced garlic and red chili flakes for 2 minutes.

Step 3

Add the chopped asparagus to the skillet and cook until al dente, approximately 3 to 4 minutes.

Step 4

Stir in the soy sauce, raw honey, chopped cilantro, and basil.

Step 5

Combine the drained noodles with the oil and spice mixture in the skillet, tossing until evenly coated.

Step 6

Serve the noodles topped with chopped peanuts and toasted sesame seeds.

Customization Tips

  • Vatas:

    Seeking an extra kick? Increase the amount of garlic and red chili flakes, and add a dash of lemon zest.

  • Pittas:

    Enhance the dish with orange zest for a vibrant twist and reduce the amount of soy sauce for a milder flavor.

  • Kaphas:

    Amplify the garlic, incorporate spinach and chilies for depth, and lessen the honey for a lighter touch.

Additional Notes

  • Toast peanuts by spreading them in an ungreased pan and baking in a preheated oven at 350°F for approximately 15 minutes, stirring occasionally.
  • Toast sesame seeds in a dry skillet over medium heat until golden brown, around 1 to 2 minutes.
